The pole is a tough one, for one, the TIE fighter can just ignore inertia and g-forces, but only has two measly lasers and no defensive systems.
By rights the Starfury would win, simply because it has missiles.
But the starfury can't operate in atmosphere, nothing in the typical one seen in the series has anything that would make it flyable in air. the TIE fighter has an anti-grav unit, but I guess you could fly it with the hexagons parallel to the ground.
That being said, your typical TIE fighter pilot can't shoot straight, period.

The starfury tops out at roughly ten gees of acceleration since it has no inertial dampening capability. Honestly, it'd be like shooting spitwads at traffic on the interstate. The fact that the starfury actually OBEYS newtonian physics, and completely lacks any kind of inertial dampening puts it at a SERIOUS disadvantage in terms of manuverability and speed. What good is being able to spin in any direction if you don't have the ability to keep your target in the crosshairs?
As for the starfury having missiles, those were only shown in "Thirdspace", and dumbfire only. (and pathetically slow at that! Even current-day missiles outperform those shown on-screen in every way.

Tie-Fighter is fast. Really fast. And really manoeverable too. That's pretty much what it was built for. But it's also really weak, and could easily go from even a single shot.
I'd still say the Tie-Fighter would win, really just for being so manoeverable.
Oh, and Tie-Fighters actually do have shields. Very, very light though.
