I'm a sucker for solo piano music, so I'll go with anything done by Yanni on the piano (In the Morning Light, Only a Memory, Until the Last Moment, others).

Simon and Garfunkel music does the trick for me, as well as just about anything that's orchestral and instrumental. Some of my best relaxers are parts of the Lord of the Rings soundtracks, the Riven soundtrack, and a few good remixes from OC Remix.
