They did that because most people traditionally think of the north geographic pole (well, maybe the solar equivalent) as up, and you have to agree on something for co-ordinate systems to mean anything.
It doesn't mean the universe shares that view (principally because it doesn't have any view).

Using the right hand rule along with Earth's orbit, we can tell that North is up and, more importantly, that New Zealand is on the bottom.

FYI, New Zealand ranges from about 37 deg south to 45 - whereas the "bottom" by that token would be no further north than 23.5 deg off the south pole, or 66.5 degrees south. It's a few thousand miles off.
