I have an iPod Touch that my job gave me (aren't they sweet?) And I use iTunes to import my plain ol' ripped MP3's to my iPod and back. Now, mine aren't purchased from iTunes...
I think as long as there is no DRM you can synch back to another PC/Mac (iTunes allows you to synch up to 5 computers before yelling at you.)

Only if you leave iTunes set to it's default settings. iTunes rips CDs in AAC, AIFF, Apple Lossless, MP3, and WAV. All of them at various quality settings of your choice. Just check your preferences.
