To make the characters "look Japanese" would mean that they'd have exaggerated stereotypical facial features. And it's not terribly reasonable to essentially be making fun of themselves constantly. I think anime is, in a way, reinventing itself. Even though it started off as its own style with huge eyes, an increasing amount of anime is looking more realistic and, dare I say, "westernized" that it used to. You seem to see more along the lines of Witch Hunter Robin, for example, as opposed to Slayers.
welll.. any genre like music will change a bit from artist to artist. Each bringing his/her own feel or expression. Eventually, somone adds some flavor or style that is very favorable amongst the masses such as Miyazaki who uses traditional anime but more of a graphic novel style with its leaning towards realisim.
