Google language options

This sometimes happens in firefox. It doesn't always stay this way but it happens enough to be annoying. Google changed to some unknown language and when I go to the language settings the two possible languages that I could use are gone (among others). Anyone know what causes this?
\"googling\" this issue hasn't turned up anything either.

I've never had an issue like that with Google, although I have had it pick Spanish by default (for obvious reasons) when I accessed it from Costa Rica. Have you tested to see if it happens in any other browser if you have one available? I would also check the support forums for your particular OS distribution and see if there is anything similar there.
Just for reference here is a snap from my preferences:
