I was searching around on google for other 6DOF games, and found the normal selection:
Descent
Freespace
Minerwars
and so on

I then came across a rather odd little 6DOF game called Arc Aether.

It's 5DoF (no independent roll control). Looks kinda fun, though.

[Edit: I take it back. Apparently there are roll controls (Q/E on PC, LB/RB on 360 controller). Cool!]
