Let's see ... I haven't even thought about it yet but I should start planning no? My kids are not cullinary experts and are quite finicky so ... I'll keep it simple as follows:

* Cajun Mashed Potatoes - My own creation, recipe below
* Italian Tomato Salad - From RecipeZaar.com, Recipe below
* Smoked Ham Slices - 1/4" thick steaks roughly 8" in diameter, cooked with pineapples
* Butter beans
* Garlic bread

Cajun Mashed Potatoes
Best mashed potatoes recipe ever! I started this around 20 years ago and refined it over the years to this recipe. My kids love it!

Time to Make: 5 minutes preparation; 20 minutes cooking

Yield: 6 servings
Nutritional analysis will be done on: 1 serving

Categories: Main Dish, One-Dish Meal, Vegetables, North American, Simple, Beginner Cook, Dinner Party, Holiday/Event, Taste/Mood, Vegetarian

Ingredients:
5 large potatoes
1 teaspoon salt
1 teaspoon Cayenne Pepper
3 oz. block Philadelphia Cream Cheese
1/2 stick Land O Lakes butter
2 tablespoons Mrs. Dash Seasoning
1/4 cup milk

Steps:
1. Wash the potatoes and cut into 1" squares.
2. LEAVE the skins on them.
3. Boil the potatoes in a large pot for 15-20 minutes or until the skins freely separate from the potatoes.
4. A few minutes prior to draining the potatoes, put the butter, salt, pepper, and cream cheese in a small bowl and microwave until soft.
5. Add the Mrs.
6. Dash seasoning and mix thoroughly.
7. When the potatoes are done, drain the water from them but leave them in the pot.
8. Pour the cheese/butter/seasoning mixture on top and add milk a little at a time until the consistency is as you like it.
9. Mix thoroughly with a potato masher, adding up to more milk if desired.
10. Serve hot.
Italian Tomato Salad

The basil really makes this salad. Be sure to use good quality tomatoes.

4 large ripe tomatoes (preferably organic)
1/2 lb fresh mozzarella cheese (preferably buffalo) or bocconcini
12 fresh basil leaves
1 tablespoon white wine vinegar
5 tablespoons olive oil
1/4 cup black olives
1/4 teaspoon dried oregano
salt and pepper

4 servings

1. Wash the tomatoes well.
2. Cut crosswise to make 1cm slices.
3. Cut the fresh cheese to make 1/2cm slices.
4. Wash the basil leaves.
5. In a small bowl, mix vinegar, olive oil and dried oregano.
6. Season with salt and pepper to taste.
7. On a large serving plate, arrange tomato slices and black olives.
8. Top with sliced cheese and sprinkle dressing over the salad.
9. Garnish with basil leaves.

Either ham or roast beef here, depending on my mom's whims. :P At least with the beef, I would expect the traditional fixings of mashed potatoes, green beans, etc. I've put in a request for my grandmother's secret-recipe baked beans, which are better than any kind you've ever had. :D

Yo Roidi, you want to get one of these for your camping trips. A mate of mine from SA brought me one god bless her, and it's a faithful freind. You make your coals, chuck yer stuff in , and after a swim and a few beers you've got a great meal waiting for you. Google it for recepies. I know they sell them down under also 'cause another mate of mine got one there.

Potjiekos rule!!!

ahh we have them, but they are called camp ovens here, and just drop them right into the campfire coals.
they make good damper (weird bread)
